Meet Jen and Nic, the Culinary Duo Behind The Nest Bistro

Jen and Nic, a husband-and-wife team, bring their combined passion for food, beverage, and hospitality to The Nest Bistro in Nanaimo. With extensive experience in the industry, they share a commitment to excellence and a love for creating unforgettable dining experiences.

Jen’s Journey

Jen’s passion for the industry led her to complete various diplomas and studies, including a chef’s training program, where she finished top of her class. She worked under gold medal-winning Chef Ernst Dorfler and later owned a successful cookie company, shipping treats across Canada and the US. Jen expanded to full-service catering, completing a diploma in Hotel/Resort management, and working at The Fairmont Banff Springs Hotel. She also owned and operated a catering business in the Rockies, cooking for high-profile clients.

Nic’s Story

Nic’s culinary journey began in 1988, funding his music education by working in kitchens. He trained as a professional musician, touring with the Vancouver Wind Trio, and serving as guest principal oboist with the Vancouver Symphony. Nic worked in ten different restaurants, earning his Canadian Red Seal trades designation, and serving as executive chef and pastry chef at a boutique hotel.

A Partnership Born

Jen and Nic met while working at a hotel, realizing a tremendous partnership was developing between them. They joined forces in life and business, bringing their amazing synergy to The Nest Bistro. With their combined expertise, they create unforgettable dining experiences, blending local ingredients, creativity, and passion.

Amazing food! Benefitted from “happy hour” specials and all 5 of us loved our meals. Desserts were divine! Prices were lower than expected which was nice.
This is one of my favorite spots in Naniamo. The restaurant is tucked away from the busy part of downtown. They have a beautiful patio that is draped with Grape Vines that must be at least 25 years old. The food is creative and delicious. Large portion sizes give customers excellent bang for their buck. There is always something new to try on their cocktail and wine list, and the staff is super friendly and knowledgeable.
What a nice little find. Being European, I was especially happy about the opening hours, being able to order freshly made food after 9pm. That's not always a given in Canadian restaurants. Service was fantastic, too. And the patio is just gorgeous on a summer night, with those grape vines and all. Visiting from Victoria, but I will be back.
