L’Ami Jean’s Legendary Rice Pudding
Recipe:
Rice Pudding:
- Heat vanilla-infused milk, add rice, and cook for 40 minutes on low heat.
- When rice is tender, add sugar and cook for 15 minutes.
- Chill in the refrigerator.
Whipped Cream:
- Whip heavy cream into a chantilly.
Assembly:
- Break chilled rice pudding into pieces using a spoon.
- Fold in whipped cream.
Nougatine:
- Create a light brown caramel with butter and sugar.
- Add nuts (hazelnuts and pistachios) and coat in caramel.
- Place on toasted almonds.
Caramel Sauce:
- Make a dark brown caramel (sugar and butter).
- Remove from heat, add cream, fleur de sel, and gelatin. Cook for 30 minutes on low heat.
- Chill in the refrigerator.
- Whip heavy cream into a chantilly.
- Fold into half of the caramel sauce, reserve the rest for later use.
