L’Ami Jean’s Legendary Rice Pudding

Recipe:

Rice Pudding:

  1. Heat vanilla-infused milk, add rice, and cook for 40 minutes on low heat.
  2. When rice is tender, add sugar and cook for 15 minutes.
  3. Chill in the refrigerator.

Whipped Cream:

  1. Whip heavy cream into a chantilly.

Assembly:

  1. Break chilled rice pudding into pieces using a spoon.
  2. Fold in whipped cream.

Nougatine:

  1. Create a light brown caramel with butter and sugar.
  2. Add nuts (hazelnuts and pistachios) and coat in caramel.
  3. Place on toasted almonds.

Caramel Sauce:

  1. Make a dark brown caramel (sugar and butter).
  2. Remove from heat, add cream, fleur de sel, and gelatin. Cook for 30 minutes on low heat.
  3. Chill in the refrigerator.
  4. Whip heavy cream into a chantilly.
  5. Fold into half of the caramel sauce, reserve the rest for later use.
